- 1/2 chopped onion sauted in a pot
- 1 minced garlic clove
- 1 tbsp chili powder
saute more
- 1.5 cups chicken broth
- 4 oz can green chili pepper, chopped
- 1 tsp cumin
simmer 20 min
- 1.5 cups canned peeled and diced tomato
- 1/2 cup chopped green pepper
- 1 pound cod
simmer until cod is cooked
- 1/2 pound cooked and shelled shrimp
Notes:
- I usually make a double portion so I have lunch the next day
- I use a 12 oz frozen pack of cod from Whole Foods and it only needs to be simmered 2 minutes if defrosted first. 5 minutes for frozen is too long
- add the cooked shrimp just before serving so it doesn't get overcooked
