papaya salad:
T 2 cloves garlic
T 5 thai chilies
Pwb 2 tbsp roasted peanuts
T 1 tbsp fish sauce
T (brown sugar) .5-1 tbsp palm sugar (or brown sugar)
Pwb 1-2 limes  (2 is on the sour side)
Pwb 1 tbsp dried shrimp (optional)
P 1-2 small tomatoes (som-tam/sida/roma)
Pwb 1 big handful of slivered green papaya

garnish:
P long beans/green beans
P/Pwb green cabbage
Pwb thai sweet basil
Pwb roasted peanuts

thai basil chicken
T 1 egg
P oil
Pwb 1 chicken breast

T 1 tsp oyster sauce
T 1/2 tsp light soy sauce
P 1/2 tsp sugar
T 1 splash dark soy sauce
Pwb 1 handful thai holy basil leaves

T 20 dried red chiles
T 4 tsp coriander seeds
T 2 fresh lemongrass stalks
T 1 tsp black peppercorns
T 4 tsp chopped galangal
T 6 Kaffir lime leaves
T 2 tbsp cilantro
T 6 tbsp shallots
T 1/4 cup garlic
T 15-20 bird's eye chiles or serrano chiles
Pwb 2 tsp ga-pi Thai shrimp paste
P 1/2 tsp salt

T/Pwb 4 cups coconut milk
Pwb 2 lb chicken pieces
P 3 cups pumpkin pieces
(Pwb sweet basil) (T has lime leaves) 2 cups sweet basil or 4 kaffir lime leaves
