I use this on dark meat with skin (drumstick, leg). I pull the skin back and rub it under the skin so it stays with the meat when it cooks. I put the skin back and coat it with oil. Roast the meat.

  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper
